Tropical Crab Cake Salad Recipe⬇️ Ingredients Tropical Crab Cake Salad Recipe⬇️ Ingredients 

Salad:
4 Meridian crab cakes
1 Tbls Meridian olive oil
1 head of local romaine lettuce
A few handfuls of arugula 
1/2 small red onion finely sliced
1 red bell pepper diced
1/2 english cucumber diced
2 large mangoes cut into bite-sized chunks

Honey Lime Dressing:
1 Tbls dijon mustard
2 limes juiced
1/3 cup Meridian olive oil
salt & pepper to taste
1 Tbls Meridian honey
1/4 cup cilantro freshly chopped Cooking Instructions: 1. In your individual bowls combine the romaine, arugula, red onion, bell pepper, cucumber and mango. 2. In a blender combine mustard, lime juice, honey, olive oil, salt, pepper and cilantro. Blend until combined and set aside. 3. Cook Meridian crab cakes in a frying pan with 1 Tbls of Meridian olive oil. Cook until the outside is crispy and the crab cake is heated though. Approx 8-10 minutes over medium (watch they don’t burn). 4. Top each salad with a crab cake and drizzle with dressing. Enjoy!
