Grilled broccolini and romesco with lemon juice and avocado oil. Raw cucumbers, bell peppers, and avocado dressed in a red wine vinegar dressing with shallots, jalapeños, and cilantro. Grilled halibut topped with salsa verde.

Remember, meals do not have to be complicated, this took no more than 20 minutes to make. Some of my tastiest meals are the ones that I just throw a random mix of whatever I have available together!
