Ingredients for Colourful Buddha Bowl
Grilled broccolini and romesco with lemon juice and avocado oil. Raw cucumbers, bell peppers, and avocado dressed in a red wine vinegar dressing with shallots, jalapeños, and cilantro. Grilled halibut topped with salsa verde.
Remember, meals do not have to be complicated, this took no more than 20 minutes to make. Some of my tastiest meals are the ones that I just throw a random mix of whatever I have available together!
Fresh produce makes for a clean, nutrient-dense, enzyme rich, and flavourful dish. Not to mention all the beneficial phytonutrients that are found in veggies.
Personally, I always love incorporating both raw and lightly cooked vegetables in my meals. Eating cooked veggies can be a better option for the digestive system for those who may have compromised digestion (leaky gut, SIBO, IBS, etc.). Cooking your vegetables helps break down the cellulose fiber found in plants, which can be difficult for some people to digest. While eating raw vegetables may not be for everybody, for those who can tolerate them in their raw source, they are naturally a great source of digestive enzymes.
