• Serves 4-5
• A healthy snack for the whole family.
1 ½ lbs. | Green beans (approx. 6 cups) fresh, whole |
STEAM
• Steam the green beans until just tender.
• Remove from heat, and immediately rinse under cold running water.
• Drain well
2 large | Clove garlic – minced | ¼ cup | Extra virgin olive oil |
1 tsp | Tarragon – dried | 1 tbsp | Dill – fresh, minced |
½ tsp | Salt | To taste | Pepper – freshly ground |
2 tsp | Dijon mustard | ½ cup | Parsley – fresh minced |
1/3 lb. | Swiss cheese – cut into thin strips | ½ cup | Olives – ripe, chopped |
1 small | Green bell pepper – sliced | 1 small | Red bell pepper – sliced |
COMBINE & TOSS
• Combine & add the drained beans to the bowl
• Toss until everything is well distributed
• Cover tightly and let marinate, at room temperature or refrigerated, for at least 2 to 3 hours. (longer is fine)
¾ tbsp. | Lemon juice – freshly squeezed |
1 tbsp | Red wine vinegar |
½ cup | Almonds – toasted and chopped |
BLEND & SERVE
• Stir in lemon juice and vinegar within about 10 minutes of serving.
• Serve cold or at room temperature.
• Top with almonds immediately before serving.
