‘Free Range’ is all about access to outdoor space. ‘Organic’ refers to what they eat. We keep our hens happy by allowing them to roam outside on pasture during daylight hours, and give them an organic all-vegetarian feed. All of the ingredients for the feed come from certified organic farms.

Because of the nutrients that the hens eat, the yolks of this variety have a darker orange color in comparison to the bright sunny yellow of the organic eggs.

Ways to Cook Eggs
There are so many ways to enjoy our delicious eggs. They can be used in cooking and baking your favourite recipes, scrambled for breakfast, or fried sunny side up to garnish the top of your pasta! One of our favourite ways to enjoy eggs is by poaching them and eating on top of toast or breakfast potatoes. Follow this easy method if you would like to try this out at home.
Perfectly Poached Eggs
Makes: 4 eggs
Ingredients: 1 tablespoon vinegar
Saucepan of water
4 fresh Coligny Creek Eggs
- Crack each egg into a small prep bowl
- Bring a medium saucepan of water to a simmer over medium heat. Add the vinegar. Using a wooden spoon, gently swirl the water in a circular motion to create a whirlpool. Carefully slide one egg into the water. It will dance and swirl around in the water and look crazy. Once the egg has stopped moving, use the spoon to gently lift the egg off the bottom of the pan. Cook the egg in the simmering water for 3 minutes, then carefully remove it with a slotted spoon and place in paper towel to remain warm and dry. Repeat with the remaining eggs. Use the freshest eggs possible for the best results when poaching.
- Toast your favorite bread, garnish with cheese and fresh items like avocado, cherry tomatoes, mushrooms, asparagus, spinach, or crispy bacon. This is where you get to have fun and try out all kinds of different options!
