Caribbean Lime Chicken Breast wrapped in Meridian bacon and stuffed with fire roasted corn and feta stuffing! Easy to cook and absolutely delicious with these simple roasted peppers!
Meridian Fiesta Bacon Chicken & Peppers
2 Meridian Fiesta chicken breast
2 coloured peppers sliced
1 Jalapeño sliced
3 Tbls Meridian olive oil
Salt & Pepper to taste
Cilantro chopped
1/4 tsp Chili peppers
1. Place the stuffed chicken breast and peppers on a baking sheet lined with parchment.
2. Add Olive oil to peppers and toss. Season peppers with salt and pepper.
3. Place baking sheet in a 400F oven for 35 minutes (until inside of chicken is 165F) then broil for 2-3 minutes to crisp up bacon and peppers. Watch it doesn’t burn!
